Truly great coffee is all about preserving the natural oils that burst forth in brewing and provide most of the flavor. Pre-ground coffee quickly loses flavor as the oils evaporate in air. Grinding your own beans just before brewing offers the best.
Whole beans should be kept refrigerated in a tightly-closed container. For long-term storage, freeze them. Oil in the beans can become rancid, spoiling their flavor.
